I don`t think you have ever had a sandwich like this before, but I dream of an eggplant sandwich when it is made this way! I created this sandwich combination when the little bakery/cafe I managed needed a vegetarian sandwich on their menu. It was such a huge hit that I knew I had something good soo I want to share it with you.
Ok, you have waited long enough! Is your mouth watering?
You will need to bake slices of peeled eggplant. See my process here.
Choose your bread. I recommend an artisan baguette, like French, multi-grain or sourdough.
Place the eggplant on the opened baguette, top with sliced provolone or mozzarella. Use however much you like. Pop into a preheated 350 oven and bake until cheese melts.
While the cheese is melting you can dress up the mayo. Use 1 tbs or so, finely chop about two black olives and two sun dried tomatoes. Mix into the mayo.
When the cheese is melted, remove from oven, slather it with mayo and add a little feta cheese. Add mixed baby greens or leaf lettuce and drizzle it with a little balsamic vinegar or roasted garlic dressing.
